Prepare Pie Crust

    Make the Pie Dough

    In a large bowl, combine flour, sugar, and salt. Add the cubed butter and mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide dough in half, shape into disks, and wrap in plastic. Refrigerate for at least 1 hour.

    Roll Out the Dough

    On a floured surface, roll out one disk of dough to fit your pie dish. Transfer to the dish, pressing it into the corners.

    Trim Excess Dough

    Trim the edges of the dough, leaving a small overhang.

Prepare Fillings

    Apple Filling

    In a large bowl, mix sliced apples with sugar, cinnamon, lemon juice, and flour. Toss until apples are well coated.

    Cherry Filling

    In another bowl, combine pitted cherries with sugar, cornstarch, almond extract, and lemon juice. Mix until cherries are coated.

Assemble and Bake

    Fill the Pie

    Pour the prepared apple or cherry filling into the pie crust, spreading it evenly.

    Top with Second Crust

    Roll out the second disk of dough and place it over the filling. Trim and crimp the edges to seal.

    Egg Wash

    In a small bowl, whisk together the egg and milk. Brush the mixture over the top crust.

    Bake

    Preheat the oven to 425°F (220°C). Bake the pie for 20 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 30-35 minutes, until the crust is golden and the filling is bubbly.
