Prepare the Blackened Catfish
Rub the catfish fillets with olive oil and Cajun seasoning. Heat a skillet over high heat and sear the catfish for 3-4 minutes on each side until blackened and cooked through. Set aside.

Make the Jambalaya
In a large pot, sauté chopped onion, bell pepper, and celery until soft. Add diced tomatoes, jambalaya rice, and chicken broth. Stir in sliced Andouille sausage and shrimp. Cover and simmer for 20 minutes until rice is cooked.

Serve
Plate the blackened catfish alongside jambalaya and seafood gumbo. Garnish with chopped green onions and serve with lemon wedges.
