Prepare the Chicken
Rub the Cajun seasoning all over the chicken breasts. Ensure they are evenly coated.

Cook the Chicken
In a skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for 6-7 minutes on each side, or until the chicken is cooked through and has a blackened crust. Remove from skillet and let rest.

Cook the Rice
In a medium saucepan, combine the rice and chicken broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and liquid is absorbed.

In the last 5 minutes of cooking the rice, stir in the drained red beans to heat through.
