Wash the potatoes thoroughly under cold water to remove dirt. Peel if desired, then cut them into thin, uniform slices (about 1/4 inch thick).

Soak Potatoes
Place the cut potatoes in a large bowl and cover them with cold water. Add 2 tablespoons of salt to the water and let them soak for at least 30 minutes. This helps to draw out moisture and improves crispiness.

Prepare Vinegar Mixture
In a saucepan, combine 1 cup of white vinegar, 1 cup of water, 1 tablespoon of sugar, 1 teaspoon of black peppercorns, and 2 crushed garlic cloves. Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer for 10 minutes.

Fry the Potatoes
Heat oil in a deep fryer or large pot to 350°F (175°C). Drain the soaked potatoes and pat them dry with a kitchen towel. Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove them with a slotted spoon and drain on paper towels.
