Blackberry Compote Preparation
1. Cook the Blackberries
In a small saucepan, combine 1 cup of blackberries, 2 tablespoons of sugar, and 1 tablespoon of lemon juice. Cook over medium heat, stirring occasionally, until the blackberries break down and the mixture thickens, about 10 minutes.
2. Cool the Compote
Remove the saucepan from the heat and let the blackberry compote cool slightly while you prepare the omelette.
Omelette Preparation
3. Whisk the Eggs
In a bowl, whisk together 3 eggs, 2 tablespoons of milk, 1 teaspoon of salt, and 1 teaspoon of black pepper until well combined.
4. Heat the Pan
In a non-stick skillet, melt 1 tablespoon of butter over medium heat until it begins to foam.
5. Cook the Omelette
Pour the egg mixture into the skillet and let it cook undisturbed for 1-2 minutes until the edges start to set.
6. Add the Brie
Once the omelette is partially set, add 100g of brie cheese, cut into small pieces, to one half of the omelette.
7. Fold and Finish Cooking
Carefully fold the other half of the omelette over the brie. Cook for an additional 1-2 minutes until the cheese is melted and the omelette is cooked through.
8. Serve with Compote
Slide the omelette onto a plate and top with the warm blackberry compote. Enjoy!
