    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and granulated sugar. Whisk together until well blended.

    Mix Wet Ingredients

    In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients. Gently stir until just combined. The batter may be slightly lumpy, which is okay. Do not overmix.

Cooking Pancakes

    Preheat the Pan

    Heat a non-stick skillet or griddle over medium heat. Add 1 tablespoon of butter or oil and let it melt, coating the surface.

    Cook Pancakes

    For each pancake, pour about 1/4 cup of batter onto the skillet. For the Mickey Mouse shape, pour two smaller circles (about 2 tablespoons each) above the large circle to form the ears.

    Flip Pancakes

    Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Carefully flip the pancakes and cook for another 1-2 minutes or until golden brown.

    Repeat the process with the remaining batter, adding more butter or oil to the skillet as needed.
