    Cook the Rice

    In a medium saucepan, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and let simmer for about 40-45 minutes or until the rice is cooked and water is absorbed. Fluff with a fork and set aside.

    Prepare the Chickpeas

    If using dried chickpeas, soak 1 cup of chickpeas in water overnight. Drain and rinse before cooking. In a pot, cover the chickpeas with water, bring to a boil, then reduce heat and simmer for about 1 hour or until tender. If using canned chickpeas, simply drain and rinse.

    Cook the Ground Goat Meat

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 pound of ground goat meat and cook until browned, about 5-7 minutes. Break up the meat with a spatula as it cooks.

    Once the meat is browned, add 1 teaspoon of cumin powder, 1 teaspoon of paprika, 0.5 teaspoon of garlic powder, 1 teaspoon of salt, and 0.5 teaspoon of black pepper. Stir well to combine and cook for an additional 2-3 minutes.

    Incorporate Spinach and Chickpeas

    Add 2 cups of fresh spinach and the prepared chickpeas to the skillet. Stir until the spinach wilts, about 2-3 minutes.

    Combine with Rice

    Finally, add the cooked brown rice to the skillet. Mix everything together and cook for another 2-3 minutes until heated through.

    Add Feta Cheese

    Remove the skillet from heat and sprinkle 0.5 cup of crumbled feta cheese over the mixture. Gently stir to combine and allow the cheese to melt slightly.
