Prepare the Buttermilk Fried Chicken

Marinate the Chicken
In a large bowl, soak the chicken thighs in buttermilk. Cover and refrigerate for at least 1 hour or overnight for best flavor.

Fry the Chicken
Heat vegetable oil in a deep skillet over medium-high heat. Remove chicken from buttermilk, allowing excess to drip off, then dredge in the flour mixture. Fry chicken in hot oil until golden brown and cooked through, about 5-7 minutes per side. Drain on paper towels.

Cook the Sausage
In a large skillet, cook the breakfast sausage over medium heat, breaking it up until fully cooked and browned.

Sprinkle the flour over the cooked sausage, stirring to combine. Slowly add milk while whisking. Bring the mixture to a simmer and cook until thickened, about 5-7 minutes. Season with salt and black pepper to taste.
Prepare the Biscuits

Combine Dry Ingredients
Preheat oven to 450°F (230°C). In a large bowl, whisk together flour, baking powder, and salt.

Add cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Milk and Cheese
Stir in milk and shredded cheddar cheese until just combined.

Drop spoonfuls of dough onto a baking sheet and bake for 12-15 minutes until golden brown.
Assemble the Dish

Split each biscuit in half. Place a piece of fried chicken on the bottom half, then generously ladle sausage gravy over the chicken. Top with the other half of the biscuit.
