Pancake Preparation

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients
In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract until smooth.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; some lumps are okay.

Fold in M&M's
Gently fold in the M&M's into the pancake batter, distributing them evenly.
Cooking

Preheat the Griddle
Heat a non-stick griddle or frying pan over medium heat. Lightly grease with cooking spray or a little butter.

Cook Pancakes
Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

Flip Pancakes
Flip the pancakes and cook for an additional 1-2 minutes on the other side until golden brown and cooked through.

Repeat
Repeat the process with the remaining batter, greasing the griddle as necessary.

Serve the pancakes warm with a pat of butter on top and drizzle with warm maple syrup.
