Bacon Preparation

Method

Bacon Curing Process

  1. 1

    Prepare the Cure Mixture

In a mixing bowl, combine the honey, brown sugar, black pepper, sea salt, smoked paprika, garlic powder, and onion powder. Mix until well combined and the sugar has dissolved.

  2. 2

    Cure the Bacon

Place the thick-cut bacon in a large resealable plastic bag or a shallow dish. Pour the honey mixture over the bacon, ensuring all pieces are well coated. Seal the bag or cover the dish tightly and refrigerate for at least 24 hours, turning the bacon occasionally.

  3. 3

    Preheat the Oven

After 24 hours, preheat your oven to 375°F (190°C).

  4. 4

    Bake the Bacon

Line a baking sheet with aluminum foil for easy cleanup and place a wire rack over it. Remove the bacon from the curing mixture, shaking off any excess. Arrange the bacon slices in a single layer on the wire rack. Bake in the preheated oven for 20-25 minutes or until the bacon is crispy and caramelized.

  5. 5

    Cool and Serve

Once the bacon is cooked, remove it from the oven and let it cool on the wire rack for a few minutes. Serve warm or allow it to cool completely before storing in an airtight container in the refrigerator.
