Method

Biscuit Directions

  1. 1

    Preheat and Prepare

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.

  3. 3

    Incorporate Butter

Cut the unsalted butter into small cubes and add it to the dry mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

  4. 4

    Add Honey and Milk

Stir in the honey and gradually add the milk, mixing until just combined. Do not overwork the dough.

  5. 5

    Shape the Biscuits

Turn the dough out onto a floured surface and gently knead it a few times. Pat it into a 1-inch thick rectangle. Use a biscuit cutter to cut out biscuits and place them on the prepared baking sheet.

  6. 6

    Bake

Bake in the preheated oven for 12-15 minutes or until golden brown on top. Remove from the oven and let cool slightly.

Jam Directions

  1. 7

    Prepare the Fruit

Wash and hull the fresh strawberries (or chosen fruit). Cut them into small pieces.

  2. 8

    Cook the Jam

In a medium saucepan, combine the chopped fruit, sugar, and lemon juice. Cook over medium heat, stirring frequently, until the mixture comes to a boil.

  3. 9

    Simmer

Reduce the heat and let it simmer for about 20-30 minutes, or until the mixture thickens to your desired consistency. Stir occasionally to prevent sticking.

  4. 10

    Cool the Jam

Remove from heat and let the jam cool before transferring it to a jar. It will thicken more as it cools.

Butter Directions

  1. 11

    Soften the Butter

Let the unsalted butter sit at room temperature until softened. This will make it easier to spread on the biscuits.
