Pancake Batter

Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are okay.
Cinnamon Swirl Filling

Prepare Swirl Mixture
In a small bowl, mix together the brown sugar, ground cinnamon, and melted butter until well combined and crumbly.
Cream Cheese Icing

Make Icing
In a medium bowl, beat the cream cheese until smooth. Gradually add the powdered sugar, followed by the milk and vanilla extract, mixing until creamy and smooth.
Cooking Pancakes

Prepare the Pan
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.

Cook Pancakes
Pour about 1/4 cup of pancake batter onto the skillet. Immediately drizzle about 1 tablespoon of the cinnamon swirl mixture on top of the batter in a swirl pattern.

Flip Pancakes
Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes. Carefully flip the pancake and cook for another 1-2 minutes until golden brown.

Repeat
Repeat with the remaining batter and cinnamon swirl mixture, adjusting the heat as necessary to prevent burning.

Serve the pancakes warm with a drizzle of cream cheese icing on top.
