Mix Dry Ingredients
In a large mixing bowl, sift together the all-purpose flour, sugar, baking powder, baking soda, and salt. Mix until well combined.

Combine Wet Ingredients
In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.
Cooking

Combine Dry and Wet Ingredients
Pour the wet mixture into the dry ingredients bowl. Gently stir until just combined; do not overmix. The batter will be slightly lumpy.

Add Optional Ingredients
If desired, gently fold in fresh blueberries, sliced strawberries, banana slices, or chocolate chips into the batter.

Heat the Griddle
Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

Cook Pancakes
Pour about 1/4 cup of batter onto the hot skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook the other side until golden brown, about 1-2 minutes more.

Serve
Remove pancakes from the skillet and keep warm while you cook the remaining batter. Serve immediately with your favorite toppings, such as syrup, additional fruit, or whipped cream.
