Biscuit Dough

Prepare the Biscuit Dough
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well mixed.

Incorporate Butter
Cut the unsalted butter into small pieces and add it to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Milk
Pour in the milk gradually, stirring with a spoon until the dough begins to come together. Do not overmix.

Shape the Dough
Turn the dough out onto a floured surface and gently knead it a few times until it’s smooth. Pat into a rectangle about 1 inch thick.

Cut the Biscuits
Use a biscuit cutter or a glass to cut out biscuits. Place them on a baking sheet lined with parchment paper.

Bake the Biscuits
Preheat the oven to 450°F (230°C) and bake the biscuits for 12-15 minutes, or until golden brown.

Marinate the Chicken
Place the chicken breasts in a bowl and pour the buttermilk over them. Allow to marinate for at least 30 minutes (or up to overnight) in the refrigerator.

Prepare the Coating
In a shallow dish, combine the all-purpose flour, paprika, garlic powder, salt, and black pepper. Mix well.

Dredge the Chicken
Remove the chicken from the buttermilk and let the excess drip off. Dredge each piece in the flour mixture, ensuring it’s fully coated.

Fry the Chicken
Heat the vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the chicken pieces. Fry for 6-7 minutes on each side, or until golden brown and cooked through.

Drain the Chicken
Once cooked, transfer the chicken to a paper towel-lined plate to drain excess oil.
Assembly

Assemble the Sandwich
Cut the baked biscuits in half and spread mayonnaise on the bottom half. Place a piece of fried chicken on top, followed by pickles and a leaf of lettuce. Top with the other half of the biscuit.
