Method

Pancake Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk together until well blended.

  2. 2

    Combine Wet Ingredients

In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

  3. 3

    Combine Wet and Dry Ingredients

Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are okay.

  4. 4

    Add Sprinkles

Fold the rainbow sprinkles into the batter gently, ensuring they are evenly distributed.

  5. 5

    Heat the Pan

Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or cooking spray.

  6. 6

    Cook the Pancakes

Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side. Repeat with remaining batter.

Topping Preparation

  1. 7

    Whip the Cream

In a mixing bowl, combine the heavy whipping cream and powdered sugar. Using a hand mixer or stand mixer, whip on medium speed until soft peaks form.

  2. 8

    Serve the Pancakes

Stack the pancakes high on a plate, top with a generous dollop of whipped cream, and sprinkle additional rainbow sprinkles on top.
