Method
Pancake Preparation
- 1
Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.
- 2
Mix Wet Ingredients
In another bowl, combine the buttermilk, egg, and melted butter. Whisk until smooth.
- 3
Combine Mixtures
Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix; the batter should be slightly lumpy.
- 4
Add Bananas and Chocolate Chips
Mash the ripe bananas in a separate bowl and fold them into the batter along with the chocolate chips.
- 5
Cook Pancakes
Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side.
Toffee Sauce Preparation
- 6
Melt Butter
In a saucepan over medium heat, melt the unsalted butter.
- 7
Add Sugar and Cream
Once the butter is melted, stir in the brown sugar and heavy cream. Bring to a gentle boil, stirring constantly until the sugar is dissolved and the sauce thickens, about 5-7 minutes.
- 8
Finish Sauce
Remove from heat and stir in the vanilla extract. Allow the sauce to cool slightly before serving.
