Preparation

    Prepare the Walleye

    In a large pot, add water and bring to a boil. Add walleye fillets and cook until they are fully cooked, about 5-7 minutes. Remove from water and let cool before flaking into small pieces.

    Mix Ingredients

    In a large bowl, combine flaked walleye, breadcrumbs, eggs, green onions, mayonnaise, Dijon mustard, Old Bay seasoning, salt, and black pepper. Mix until well combined.

    Form Cakes

    Shape the mixture into patties, about 3 inches in diameter. Place them on a baking sheet lined with parchment paper.

    Cook the Cakes

    Heat olive oil in a skillet over medium heat. Cook the walleye cakes for about 4-5 minutes on each side, or until golden brown.

    Grill the Lemon

    While the cakes are cooking, slice the lemon in half and grill for about 2-3 minutes until charred.

    Serve

    Serve the walleye cakes hot, topped with Forager Farms micros and alongside grilled lemon.
