    Prepare the Steaks

    Remove the filet mignon steaks from the refrigerator and let them sit at room temperature for about 30 minutes. Pat them dry with paper towels.

    Season the Steaks

    Generously season both sides of the steaks with salt and black pepper.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.

    Sear the Steaks

    Add the filet mignon steaks to the hot skillet. Sear for about 3-4 minutes on one side without moving them, until a nice crust forms.

    Flip and Add Butter

    Flip the steaks and add the butter and fresh herbs to the pan. Cook for an additional 3-4 minutes for medium-rare, basting the steaks with the melted butter.

    Rest the Steaks

    Remove the steaks from the skillet and transfer them to a cutting board. Let them rest for 5-10 minutes before slicing.
