    Prepare the Potato Chips

    Thinly slice the potatoes using a mandoline or sharp knife. Rinse in cold water and pat dry. Heat oil in a deep pan over medium heat. Fry potato slices in batches until golden and crispy. Remove and drain on paper towels, seasoning with salt while still warm.

    Make the Ssamjang Aioli

    In a bowl, combine Ssamjang and mayonnaise. Mix well until smooth and set aside.

    Prepare the Tartare Mixture

    Finely chop the beef tenderloin, cornichons, shallots, and chives. In a bowl, combine the chopped ingredients, adding salt and pepper to taste.

    Plating

    Form the tartare mixture into a small patty or mound on a plate. Make a small indentation in the center and carefully place a quail egg on top. Drizzle with Ssamjang aioli and garnish with additional chives.

    Serve

    Serve immediately with house-made potato chips on the side.
