Prepare the Bacon
Preheat the oven to 375°F (190°C). Place the slab bacon on a baking sheet lined with parchment paper.

Glaze the Bacon
In a small bowl, mix the maple syrup and black pepper. Brush the mixture generously over the slab bacon.

Bake the Bacon
Bake the bacon in the preheated oven for 25-30 minutes, or until it is crispy and caramelized, basting with the remaining glaze halfway through.

Prepare the Topping
While the bacon is baking, chop the smoked pecans coarsely and set aside.

Serve
Remove the bacon from the oven and let it rest for a few minutes. Slice the bacon into thick pieces, serve with apricot chutney and sprinkle the smoked pecans on top.
