Caramelize the Onions
In a skillet, melt 1 tablespoon of butter over medium heat. Add sliced onions, and cook slowly, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Season with a pinch of salt and set aside.

Prepare the Beef Patty
In a bowl, season the ground beef with salt and black pepper. Form into two equal patties, about 1/2 inch thick.

Cook the Patties
In the same skillet, add another tablespoon of butter. Cook the patties over medium-high heat for about 3-4 minutes on each side or until they reach your desired level of doneness. Top each patty with 2 slices of cheddar cheese during the last minute of cooking to melt.

Prepare the Secret Sauce
In a small bowl, mix together mayonnaise, ketchup, mustard, and a pinch of salt and pepper. Adjust to taste.

Assemble the Patty Melt
Spread the secret sauce on one side of each slice of bread. Place a cooked patty on top of the sauce on two slices of bread, followed by caramelized onions. Top with the remaining slices of bread, sauce side down.

Serve
Remove from the skillet, cut in half, and serve hot with additional secret sauce if desired.
