Method
Prepare the Roasted Garlic
Roast the Garlic
Preheat your oven to 400°F (200°C). Cut the top off a whole head of garlic, drizzle with olive oil, wrap in aluminum foil, and roast in the oven for about 30-35 minutes until soft and caramelized.
Make the Hummus
Blend the Ingredients
In a food processor, combine the canned chickpeas (drained and rinsed), tahini, lemon juice, roasted garlic (squeezed out of the skins), olive oil, ground cumin, salt, and water. Blend until smooth, scraping down the sides as necessary.
Adjust Consistency
If the hummus is too thick, add a little more water (1 tablespoon at a time) until you reach your desired consistency.
Prepare the Pita Chips
Make the Chips
While the hummus is blending, cut the pita bread into triangles. Toss them in a bowl with olive oil, salt, and paprika until evenly coated.
Bake the Chips
Spread the pita triangles on a baking sheet in a single layer and bake in the oven at 400°F (200°C) for about 10-12 minutes, or until golden brown and crispy. Flip halfway through for even cooking.
Serve
Plate and Enjoy
Transfer the hummus to a serving bowl, drizzle with olive oil, and serve alongside the warm pita chips.
