Method
Preparing the Short Ribs
Season the Ribs
Generously season the beef short ribs with salt and black pepper on all sides.
Sear the Ribs
In a large Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear for about 3-4 minutes on each side until browned. Remove the ribs and set aside.
Add Broth and Herbs
Return the short ribs to the pot. Add beef broth, thyme, and bay leaves. Bring to a boil, then reduce heat to low.
Braise the Ribs
Cover and simmer for 3 hours, or until the meat is tender and falling off the bone. Check occasionally and add water if needed.
