Grilled Salmon

    Prepare the Marinade

    In a small bowl, whisk together olive oil, lemon juice, minced garlic, dried dill, salt, and black pepper.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over the top. Cover and refrigerate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Salmon

    Remove the salmon from the marinade and place them on the grill. Cook for about 4-6 minutes on each side, or until the salmon flakes easily with a fork.

Garlic Mashed Potatoes

    Cook the Potatoes

    Peel and cut the potatoes into quarters. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook for about 15-20 minutes, or until tender.

    Roast the Garlic

    While the potatoes are cooking, peel the garlic cloves and sauté them in 1 tbsp of butter until golden and fragrant.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add the sautéed garlic, remaining butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Seasonal Vegetables

    Prepare the Vegetables

    Wash and trim the asparagus, and peel and slice the carrots.

    Cook the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the asparagus and carrots, season with salt and black pepper, and sauté for about 5-7 minutes, or until tender.
