Filet Mignon

Prepare the Steak
Take the filet mignon out of the refrigerator and let it come to room temperature for about 30 minutes before cooking. This ensures even cooking.

Season the Steak
Pat the filet mignon dry with paper towels. Rub both sides with olive oil, salt, and black pepper.

Sear the Steak
In a skillet over medium-high heat, add the butter, garlic cloves (smashed), and fresh thyme. Once the butter is melted and bubbling, add the filet mignon. Sear for 4-5 minutes on each side for medium-rare, or until your desired doneness.

Rest the Steak
Once cooked to your liking, remove the steak from the skillet and let it rest on a cutting board for about 5 minutes before slicing.
Truffle Fries

Prepare the Potatoes
Preheat your oven to 425°F (220°C). Wash and peel the russet potatoes, then cut them into thin strips (about 1/4 inch thick).

Season the Fries
In a large bowl, toss the potato strips with olive oil, salt, and black pepper until evenly coated.

Bake the Fries
Spread the coated fries in a single layer on a baking sheet. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden and crispy.

Finish with Truffle Oil
Remove the fries from the oven and drizzle with truffle oil. Toss to coat. Sprinkle with grated Parmesan cheese and chopped fresh parsley before serving.
