Crispy Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Coating
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Soak the Calamari
In another bowl, pour the buttermilk over the calamari rings, ensuring they are evenly coated. Let them soak for at least 15 minutes.

Heat the Oil
In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Remove the calamari from the buttermilk and let the excess drip off. Dredge them in the flour mixture, ensuring they are fully coated.

Fry the Calamari
Carefully place the coated calamari rings into the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

Prepare the Aioli
In a small bowl, combine the mayonnaise, minced garlic, sriracha sauce, lemon juice, and salt. Mix well until smooth.

Taste and Adjust
Taste the aioli and adjust the seasoning or spiciness by adding more sriracha or salt if desired.
