Cook the Pasta
Boil a large pot of salted water and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
Make the Cheese Sauce
In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute to form a roux. Gradually whisk in the milk, continuing to whisk until the mixture thickens and is smooth. Stir in the sharp cheddar cheese and mozzarella cheese until melted and smooth. Season with salt, pepper, and paprika.
Combine Pasta and Sauce
Add the cooked macaroni to the cheese sauce and stir until well coated.
Prepare for Baking
