Make the Pancake Batter

Combine Dry Ingredients

In a mixing bowl, whisk together the flour, baking powder, sugar, and salt.

Mix Wet Ingredients

In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.

Combine Mixtures

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; some lumps are fine.

Cook the Pancakes

Preheat Pan

Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.

Cook Pancakes

Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.

Prepare Caramelized Plantains

Slice Plantains

Peel and slice the plantains diagonally into 1/2 inch thick pieces.

Caramelize

In a skillet, melt the butter over medium heat. Add the plantain slices and brown sugar, cooking until the plantains are golden and caramelized, about 3-4 minutes on each side.

Prepare Berry Macedonia

Combine Berries and Syrup

In a bowl, gently mix together the mixed berries and maple syrup.

Assemble and Serve

Plate the Dish

Serve pancakes topped with caramelized plantains and berry macedonia. Add a dollop of virgin butter on top.
