Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Dry the Potatoes

After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove as much moisture as possible.

Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes

Carefully add the dried potato strips to the hot oil in batches, making sure not to overcrowd the pot. Fry them for about 4-5 minutes or until they are golden brown and crispy.

Drain and Season

Remove the fries from the oil and place them on paper towels to drain excess oil. While still hot, sprinkle with salt and pepper to taste.
