Prepare the Plantains
Peel the ripe plantains by cutting off both ends and making a lengthwise slit to remove the skin. Slice the plantains diagonally into about 1-inch thick pieces.
Heat the Oil
In a large frying pan, heat the cooking oil over medium heat until it is hot but not smoking.
Fry the Plantains
Carefully add the sliced plantains to the hot oil. Fry them for about 2-3 minutes on each side, or until they are golden brown and caramelized.
Drain and Season
Once fried, remove the plantains from the oil and place them on paper towels to drain excess oil. Sprinkle with salt to taste.
