Cook the Seafood
In a large paella pan or skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp, scallops, calamari, clams, and mussels. Sauté for about 3-4 minutes until they are just cooked. Remove and set aside.

Cook the Chicken and Chorizo
In the same pan, add another tablespoon of olive oil. Add the diced chicken and sliced chorizo. Cook until the chicken is browned and cooked through, about 5-7 minutes.

Combine Ingredients
Stir in the rice, paprika, and saffron. Pour in the chicken broth and season with salt and pepper. Bring to a boil.

Simmer
Reduce the heat to low and let it simmer for about 20 minutes without stirring. The rice should absorb most of the liquid.

Add Back Cooked Seafood
After 20 minutes, gently place the cooked seafood back into the pan, covering with a lid. Cook for another 5-7 minutes until everything is heated through and the rice is tender.

Remove from heat and let it sit for a few minutes. Garnish with fresh parsley if desired, then serve the paella warm.
