Pork Chop Preparation

    Season the Pork

    Pat the Iberian pork chops dry with paper towels. Season both sides with salt, black pepper, and fresh rosemary.

    Sear the Pork

    In a skillet, heat olive oil over medium-high heat. Add the pork chops and sear for 4-5 minutes on each side, or until they reach an internal temperature of 145°F. Remove from heat and let rest.

Scallop Potatoes Preparation

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Prepare Potatoes

    Slice the potatoes thinly and layer them in a baking dish. In a saucepan, combine heavy cream, minced garlic, salt, and black pepper. Heat until warm.

    Bake Potatoes

    Pour the cream mixture over the potatoes and dot with butter. Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes until golden brown.

Apple Salad Preparation

    Prepare Apple

    Core and slice the green apple. In a bowl, toss the apple slices with lemon juice, honey, and salt.

Assembly

    Plate the Dish

    On a plate, place a generous portion of scallop potatoes, top with the seared pork chop, and garnish with apple salad. Drizzle the organic lingonberry jam on top.
