Cooking Spicy Potatoes

    Roast the Potatoes

    Preheat the oven to 200°C (400°F). Toss the diced potatoes with olive oil, chili powder, cumin, and salt. Spread them out on a baking sheet and roast for about 25-30 minutes or until golden and crispy.

Preparing Jerez Sauce

    Make the Sauce

    In a skillet, melt the butter over medium heat. Add minced shallots and sauté until translucent. Pour in the Jerez and let simmer for about 5 minutes until slightly reduced. Season with salt and remove from heat.

Cooking Calamari

    Sear the Calamari

    In a separate pan, heat olive oil over high heat. Add minced garlic and sauté for 30 seconds. Add the baby calamari, lemon zest, paprika, salt, and black pepper. Sear for about 2-3 minutes until the calamari are cooked through and slightly charred.

Serving

    Plate the Dish

    On a plate, place a generous serving of roasted spicy potatoes. Top with the seared baby calamari and drizzle with the Jerez sauce. Garnish with chopped fresh parsley.
