    Cook the Beef

    In a large pot, heat olive oil over medium heat. Add the beef flank steak and sear on all sides until browned. Remove the beef and set aside.

    Sauté Vegetables

    In the same pot, add sliced onion, green bell pepper, and minced garlic. Sauté until the vegetables are soft.

    Add Remaining Ingredients

    Return the beef to the pot and add diced tomatoes, beef broth, cumin, oregano, bay leaves, salt, and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for about 2-3 hours or until the beef is tender.

    Shred the Beef

    Once the beef is tender, remove it from the pot and shred it using two forks. Return the shredded beef to the pot and stir to combine.

    Prepare Rice

    Cook white rice according to package instructions.

    Heat Black Beans

    In a small pot, heat the canned black beans over medium heat until warmed through.

    Cook Plantains

    Peel and slice the sweet plantains. In a skillet, melt butter over medium heat and fry the plantain slices until golden brown on both sides.

    Plate the Dish

    To serve, place a generous portion of rice on each plate, top with shredded beef, and serve with black beans and fried plantains on the side.
