Roasting the Pork

    Prepare the Marinade

    In a bowl, mix olive oil, paprika, cumin, salt, black pepper, garlic, onion, and lime juice to create a marinade.

    Marinate the Pork

    Rub the marinade all over the pork shoulder and let it marinate for at least 2 hours, preferably overnight in the refrigerator.

    Roast the Pork

    Preheat the oven to 300°F (150°C). Place the marinated pork in a roasting pan and cover with foil. Roast for about 3-4 hours or until the internal temperature reaches 190°F (88°C). Remove foil for the last 30 minutes to brown the pork.

    Cook the Rice

    In a pot, combine rice, kidney beans, coconut milk, thyme, garlic, salt, and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is tender and the liquid is absorbed.

Frying the Plantains

    Prepare the Plantains

    Peel the ripe plantains and slice them diagonally into 1-inch thick pieces.

    Fry the Plantains

    Heat vegetable oil in a skillet over medium heat. Fry the plantain slices for about 2-3 minutes on each side until golden brown. Drain on paper towels.
