Pork Osobuco

    Prepare the Pork

    Preheat the oven to 325°F (165°C). Season the Iberian pork shanks with salt and black pepper. Heat olive oil in a large oven-safe pot over medium-high heat. Sear the pork shanks on all sides until browned. Remove from the pot and set aside.

    Sauté Vegetables

    In the same pot, add onion, carrots, celery, and garlic. Sauté until softened. Pour in the red wine and let it reduce by half.

    Braise the Pork

    Return the pork shanks to the pot. Add beef broth, thyme, and bay leaves. Bring to a simmer, cover, and transfer to the oven. Cook for 2 to 2.5 hours or until the meat is tender.

Scalloped Potatoes

    Prepare the Potatoes

    In a greased baking dish, layer the thinly sliced potatoes. In a bowl, mix heavy cream, cheddar cheese, salt, pepper, and nutmeg. Pour the mixture over the potatoes.

    Bake

    Cover the dish with foil and bake at 375°F (190°C) for 45 minutes. Remove the foil and bake for an additional 15 minutes until golden and bubbly.

Spinach

    Sauté Spinach

    In a pan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add spinach, salt, and pepper. Cook until wilted, about 3-4 minutes.

Green Apple Radish Aujus

    Prepare Aujus

    In a saucepan, combine diced green apples, sliced radishes, beef broth, apple cider vinegar, and honey. Bring to a simmer and cook for 15 minutes. Season with salt and pepper to taste.
