Artichokes

Method

Preparation

  1. 1

    Prepare the Artichokes

Start by trimming the artichokes. Cut off the top third of each artichoke and trim the stems. Remove any small leaves at the base and rub the cut areas with lemon juice to prevent browning.

  2. 2

    Marinate

In a bowl, mix olive oil, salt, and black pepper. Brush this mixture over the artichokes, ensuring they are well coated.

  3. 3

    Prepare the Filling

In another bowl, combine the grated manchego cheese, chopped marinated asparagus, minced garlic, and chopped parsley. Mix well to create the filling.

Roasting

  1. 4

    Stuff the Artichokes

Gently open the leaves of each artichoke and stuff the filling mixture between the leaves and into the center of each artichoke.

  2. 5

    Roast

Place the stuffed artichokes in a baking dish, add a bit of water to the bottom of the dish, cover with foil, and roast in a preheated oven at 375°F (190°C) for about 45 minutes.

  3. 6

    Serve

Remove the foil and roast for an additional 10-15 minutes, or until the artichokes are tender and lightly browned. Serve warm.
