    Preheat the Oven

    Preheat your oven to 325°F (165°C).

    Season the Oxtail

    Pat the oxtail pieces dry with paper towels. Season them generously with salt and black pepper.

    Sear the Oxtail

    In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Add the oxtail pieces and sear until browned on all sides, about 8-10 minutes. Remove the oxtail from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are softened.

    Add Tomato Paste and Liquid

    Stir in the tomato paste and cook for 2 minutes. Then add the black beer, beef broth, bay leaves, and thyme. Bring to a simmer.

    Combine and Roast

    Return the seared oxtail to the pot, ensuring they are submerged in the liquid. Cover the pot with a lid and transfer it to the preheated oven. Roast for 3 hours.

Final Touches

    Check for Tenderness

    After 3 hours, check if the oxtail is tender. If not, cover and cook for an additional 30-60 minutes.

    Serve

    Once tender, remove the pot from the oven. Discard bay leaves. Serve the oxtail sprinkled with cooked lima beans.
