Cooking the Skirt Steak

    Prepare the Marinade

    In a bowl, mix olive oil, salt, black pepper, and garlic powder. Rub the mixture all over the skirt steak and let it marinate for at least 30 minutes.

    Grill the Steak

    Preheat the grill to high heat. Grill the marinated skirt steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.

Frying the Cassava

    Prepare the Cassava

    Peel and cut the cassava into thick strips. Boil in salted water for about 20 minutes or until tender. Drain and let cool.

    Fry the Cassava

    In a deep pan, heat vegetable oil over medium-high heat. Once hot, add the boiled cassava strips and fry until golden brown and crispy. Remove and drain on paper towels. Season with salt.

Making the Bariloche Chimichurri

    Mix the Ingredients

    In a bowl, combine chopped parsley, oregano, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Stir well to combine and let it sit for at least 15 minutes for the flavors to meld.
