Method

Prepare the Soup

    Cook the Lobster

    In a large pot, melt 2 tablespoons of butter over medium heat. Add the lobster tails and cook until they turn bright red, about 5-7 minutes. Remove and set aside.

    Make the Base

    In the same pot, add the remaining butter, onion, garlic, celery, and carrots. Sauté until soft, about 5 minutes.

    Add Stock and Cream

    Pour in the fish stock and bring to a boil. Reduce heat and add heavy cream. Simmer for 10 minutes.

    Combine Lobster and Vegetables

    Chop the cooked lobster into bite-sized pieces and add it back into the pot. Season with salt and black pepper to taste.

Prepare the Garnish

    Cook Asparagus and Fava Beans

    In a small pot, bring water to a boil and blanch the asparagus and fava beans for 2-3 minutes until tender. Drain and set aside.

Make Chantilly Foam

    Whip the Cream

    In a mixing bowl, combine heavy cream, vanilla extract, and powdered sugar. Whip until soft peaks form.

Serve

    Plate the Dish

    Ladle the lobster stew into bowls, top with blanched asparagus and fava beans, and finish with a dollop of chantilly foam.
