Prepare the Dough
In a medium saucepan, combine water, unsalted butter, 1 tablespoon of sugar, and salt. Bring to a boil over medium heat. Once boiling, remove from heat and stir in flour until the mixture forms a ball. Let it cool for 5 minutes.

Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Heat the Oil
In a large pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Pipe the Churros
Transfer the dough to a piping bag fitted with a large star tip. Pipe strips of dough directly into the hot oil, cutting them to your desired length with scissors.

Fry the Churros
Fry the churros in batches until they are golden brown, about 2-3 minutes on each side. Use a slotted spoon to remove them and drain on paper towels.

In a shallow bowl, combine 1 cup of granulated sugar and 2 teaspoons of cinnamon. Roll the hot churros in the sugar-cinnamon mixture until fully coated.
