    Prepare the Fish

    Cut the Chilean seabass into small cubes (about 1/2 inch). Place in a glass bowl.

    Make Tiger Milk

    Blend the rocoto pepper, yellow pepper, and lime juice until smooth. Strain to remove solids.

    Combine Ingredients

    Pour the tiger milk over the seabass, add sliced red onion, and chopped cilantro. Season with salt to taste.

    Marinate

    Cover and let the mixture marinate in the refrigerator for about 15-20 minutes, allowing the fish to 'cook' in the citrus juices.

Serving

    Plate the Ceviche

    Spoon the ceviche into serving bowls and garnish with avocado slices, cooked corn, and sweet potato.
