    Make the Dough

    In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the cold water, a tablespoon at a time, until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until softened. Add the chopped spinach and cook until wilted. Remove from heat and let cool. In a bowl, combine the cooked chicken (or omit for cheese only), cream cheese, cheddar cheese, sautéed spinach mixture, salt, and pepper.

    Assemble the Empanadas

    Preheat the oven to 375°F (190°C). On a floured surface, roll out the dough to about 1/8 inch thick. Cut out circles (about 4-5 inches in diameter). Place a tablespoon of filling on one half of each circle. Fold over and press the edges to seal. Use a fork to crimp the edges.
