Preparing the Filling

    Cook the Plantains

    In a pan, heat some olive oil over medium heat. Add the sliced plantains and cook until golden and soft, about 3-4 minutes per side. Remove and set aside.

    Sauté the Shrimp and Vegetables

    In the same pan, add the shrimp and cook until pink, about 2-3 minutes. Add chopped spinach and asparagus, and cook until spinach is wilted and asparagus is tender, about 3-4 minutes. Mix in the cooked plantains. Season with salt and pepper to taste.

Preparing the Chicken

    Prepare the Chicken Breasts

    Preheat the oven to 375°F (190°C). Using a sharp knife, carefully cut a pocket into each chicken breast. Season both sides with olive oil, salt, and pepper.

    Stuff the Chicken

    Stuff each chicken breast pocket with the shrimp and vegetable mixture. Secure with toothpicks if necessary.

    Bake the Chicken

    Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and juices run clear.

Making the Sauce

    Prepare the Passion Fruit Sauce

    In a saucepan, combine passion fruit pulp, Bianco wine, honey, and lemon juice. Bring to a simmer over medium heat and cook for 5-7 minutes until slightly thickened.
