Method
Preparing the Calamari
Clean the Squid
If not already cleaned, remove the head, innards, and beak from the squid. Rinse thoroughly under cold water and cut into 1/2-inch rings.
Mix the Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well to ensure even distribution.
Coat the Calamari
Add the squid rings to the dry mixture and toss until all pieces are evenly coated.
Frying the Calamari
Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Calamari
Carefully add the coated calamari in batches to the hot oil. Fry for about 2-3 minutes or until golden brown and crispy. Do not overcrowd the pan.
Drain the Calamari
Using a slotted spoon, remove the fried calamari from the oil and place them on a plate lined with paper towels to absorb excess oil.
Preparing the Dipping Sauce
Mix the Sauce Ingredients
In a small bowl, combine the mayonnaise, lemon juice, minced garlic, hot sauce, and salt. Stir well until smooth and evenly mixed.
