Preparation
Prepare the Chicken
Start by seasoning the chicken breasts with salt and black pepper on both sides.
Dredge in Flour
Place the all-purpose flour in a shallow dish. Dredge each chicken breast in the flour, shaking off the excess.
Slice the Mushrooms
Clean the mushrooms using a damp cloth, then slice them thinly.
Chop the Parsley
Finely chop the fresh parsley and set aside for garnish.
Cooking
Heat the Oil and Butter
In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat until the butter is melted and starts to foam.
Cook the Chicken
Add the floured chicken breasts to the skillet. Cook for about 4-5 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Add Marsala Wine
Pour in the Marsala wine, scraping up any browned bits from the bottom of the skillet. Let it simmer for about 2 minutes to reduce slightly.
Add Chicken Broth
Add the chicken broth to the skillet and bring the mixture to a gentle simmer.
Return Chicken to the Skillet
Return the cooked chicken breasts to the skillet, spooning some sauce over them. Let them simmer in the sauce for another 5 minutes.
Garnish and Serve
Sprinkle the chopped parsley over the chicken before serving. Serve hot with your choice of sides.
