Preparing the Shrimp

    Season and Cook the Shrimp

    In a bowl, combine the peeled and deveined Gulf shrimp with Cajun seasoning and minced garlic. Toss to coat evenly. Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side or until they are pink and opaque. Remove from heat and set aside.

Making the Grits

    Cook the Grits

    In a saucepan, bring 4 cups of water to a boil. Add grits and salt, stirring constantly. Reduce heat to low and simmer for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy. Stir in butter and shredded white cheddar cheese until melted and smooth. Set aside.

Preparing the Vegetables

    Sauté the Vegetables

    In the same skillet used for the shrimp, add the diced onion, bell pepper, and sliced squash. Sauté for 5-7 minutes until soft. Add chopped collard greens and continue to sauté for an additional 5 minutes until the greens are wilted. Drizzle with chili oil and mix well.

Serving

    Plate the Dish

    On each plate, spoon a generous amount of the creamy cheddar grits. Top with the sautéed vegetables and arrange the Cajun-charred shrimp on top. Drizzle additional chili oil if desired. Serve hot.
