Pasta Preparation

Cook the Pasta
Bring a large pot of salted water to a boil. Add the corkscrew pasta and cook according to package instructions until al dente, about 8-10 minutes.

Drain the Pasta
Once cooked, drain the pasta and set aside. Do not rinse.
Pimento Cheese Sauce

Add Milk
Gradually whisk in the milk, stirring continuously until the mixture thickens, about 3-5 minutes.

Mix in Cheese and Seasonings
Stir in the pimento cheese, garlic powder, onion powder, salt, and black pepper. Mix until the cheese has melted and the sauce is smooth.
Combine and Bake

Combine Pasta and Sauce
Preheat your oven to 350°F (175°C). In a large bowl, combine the cooked pasta with the pimento cheese sauce and mix well.

Transfer to Baking Dish
Transfer the mac and cheese mixture into a greased baking dish.

Prepare Topping
In a small bowl, mix the breadcrumbs with olive oil. Sprinkle the breadcrumb mixture evenly over the mac and cheese, then top with grated white cheddar cheese.

Bake the Dish
Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and the cheese is bubbly.

Remove from the oven and let it cool for a few minutes before serving.
