Preparing the Mac and Cheese

    Cook the Pasta

    In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In the same pot, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until golden. Gradually whisk in milk, stirring constantly until the mixture thickens. Add shredded cheddar cheese, salt, black pepper, and paprika; stir until cheese is melted and smooth.

    Combine Pasta and Sauce

    Add the cooked macaroni to the cheese sauce and mix well. Allow the mixture to cool in the pot for about 30 minutes.

Coating the Bites

    Prepare Coating Station

    Set up three bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, grated Parmesan cheese, and salt.

    Form the Bites

    Once the mac and cheese mixture is cooled, use your hands to form small balls or bites, about 1-inch in diameter.

    Coat the Bites

    Roll each mac and cheese ball first in flour, then dip in beaten eggs, and finally coat with the breadcrumb mixture. Place coated bites on a baking sheet.

Frying the Bites

    In a large heavy-bottomed pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Carefully add the coated mac and cheese bites to the hot oil in batches, frying for about 3-4 minutes or until golden brown. Use a slotted spoon to remove them and drain on paper towels.
