Mac & Cheese Preparation

Cook the Pasta
In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce
In the same pot, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until golden. Gradually whisk in milk, then add the sharp cheddar cheese, pimento cheese, salt, pepper, garlic powder, and onion powder. Stir until smooth and creamy.

Combine Pasta and Sauce
Add the cooked macaroni to the cheese sauce and stir until well coated. Let it cool slightly, then mix in the beaten egg.

Make the Sauce
Add the cream cheese and stir until melted. Gradually add the shredded cheddar and milk, stirring until smooth. Season with salt and pepper.

Form the Bites
Using your hands, form the mac & cheese mixture into bite-sized balls. Roll each ball in the breading mixture until fully coated.

Heat Oil
In a deep pot, heat oil over medium-high heat until it reaches 350°F (175°C).

Fry the Bites
Carefully drop the mac & cheese bites into the hot oil in batches. Fry for 3-4 minutes until golden brown. Remove with a slotted spoon and drain on paper towels.

Drizzle Sauce
Serve the mac & cheese bites warm, drizzled with jalapeño-cheese sauce on top.
